Sweet Curry Roasted Chickpeas

Roasted chickpeas are one of my favorite snacks because they are just so healthy and delicious!  With an abundance of spices to choose from, you can flavor them however you would like.  This particular version is inspired by Indian food, but has a cinnamon kick.  Somewhere between sweet and spicy, they are perfect for munching!

Roasted chickpeas are great on their own, but they also work great in snack mixes, salads, and grain bowls.  Tossing a few in adds a bit of plant based protein, a nice crunch, and a great flavor.  Perhaps mix them with dried fruit and nuts for a balanced snack, or try this berry chickpea salad!

Ingredients

 1 15oz can chickpeas
 ½ tbsp olive or coconut oil
 ½ tbsp maple syrup
 1 tsp curry powder
 ½ tsp cinnamon
  tsp ginger
  tsp nutmeg

Directions

Preheat oven to 350 degrees Fahrenheit.

Rinse and drain chickpeas then dry them thoroughly with a paper towel. Remove skins if desired. This will help with creating extra crunch, but it is an unnecessary step. However, it will give you something to do while the oven is preheating!

Spread chickpeas on a baking sheet lined with parchment paper.

Roast chickpeas by themselves for 10 minutes. Meanwhile, stir to combine the rest of the ingredients in a heat safe bowl.

After 10 minutes, remove chickpeas from the oven and transfer into the bowl with the spices. Toss to coat.

Spread chickpeas on the baking sheet again and roast for 30-35 more minutes. Check chickpeas and shake the pan about every 15 minutes.

Remove the chickpeas when they are hard but not pebble-like. Let cool and store in an open container (this will prevent mushiness). Enjoy!
