Chocolate Chip Banana Bread Muffins

Bananas and chocolate – a classic yet decadent combination, especially for breakfast, and especially in banana bread. However, making a loaf of bread can be a time consuming task because it takes nearly 60 minutes to bake. But what if you are short on time, or you want some banana bread for breakfast? Assuming no leftovers, I’m not about to wait over an hour to eat. 30 minutes for muffins though? That’s doable.
These guys have the same fluffy, moist, and utterly mouthwatering texture of banana bread, but they are already in individual portions and quicker to whip up. Plus, they’re crazy delicious. Just thinking about them is making me smile!
Ingredients Directions Preheat oven to 350 degrees Fahrenheit, and line a standard muffin tin with 12 baking cups. Whisk together flour, baking soda, cinnamon, and salt. Set aside. Mix granulated sugar, brown sugar, oil, yogurt, and vanilla until smooth. Add eggs and mix well. Stir in banana and dry mixture until evenly combined. Add chocolate chips. Divide batter evenly between cups, filling each about 3/4 full. Bake for about 20 minutes, until a toothpick comes out clean. Immediately transfer to a cooling rack. Enjoy or freeze for later! Note: The banana bread base is simply incredible and works with many types of mix-ins. Blueberries are one of my personal favorites, but you can also substitute the chocolate chips for nuts, dried cranberries, or even apples! Enjoy 🙂
