Chia Seed Pudding Parfait

Switch up your breakfast or snack with this super easy chia seed pudding parfait! Perfect for a pre/post-workout snack, chia seeds offer many benefits such as omega-3 fatty acids and antioxidants. In addition, the chia seed pudding parfait is vegan, dairy free, paleo, and gluten free.  For an easy, on-the-go breakfast, prepare the night before and let sit in the fridge overnight.  In the morning, add extra liquid if needed, get creative with toppings, and enjoy!

Ingredients

Chia Seed Pudding Parfait
 2 tbsp chia seeds
 ¾ cup unsweetened coconut/almond milk
 1 cup frozen berries (blueberry, strawberry, raspberry, blackberry)
 drizzle of honey
 ¼ tsp vanilla extract
Optional (but delicious)
 granola
 fresh or frozen berries
 sliced banana
 coconut flakes
 honey
 nuts (almonds, pecans, walnuts)
 cocoa nibs
 dried fruits (raisins, dried cranberries, dried blueberries)
 ancient grains
 cinnamon
 goji berries

Directions

Chia Seed Pudding Parfait

Stir together chia seeds, coconut/almond milk, and vanilla extract until combined and chia seeds are not clumpy.

Cover chia seed mixture and refrigerate until desired consistency (about 2 hours).

Thaw frozen berries in microwave for 30 seconds, then use blender to nearly puree the mixture. Stir in a drizzle of honey into berry mixture.

Pour half of chia seed pudding into a cup followed by berry mixture, then scoop in the rest of the chia seed pudding.

Top with berries, granola, coconut flakes, or optional toppings. Stir in extra honey if desired, enjoy!
