Strawberry Banana Bread

Instead of simply raving about the recipe, I thought I would bring in some inspiration.  So, I will be introducing a quote and adding my personal insight before discussing how it relates to your life.  Ultimately, it all ties back to this delightful strawberry banana bread and will hopefully inspire you.  Today’s quote deals with staying in the moment, which I believe is a vital component of finding happiness and fulfillment.

This quote shares a special place in my heart… I read it in a speech to my gymnastics team before we competed against University of Arkansas a few weeks ago.  I spoke about the importance of living in the moment and taking the opportunity to shine on the competition floor that night. 

During the meet, we were focused on each skill, each stuck landing, and each celebratory hug as it was happening.  We weren’t thinking about what happened at practice earlier in the week, or even the super early travel day ahead of us.  We stayed in the present, and that allowed us to enjoy the experience to the greatest extent.  I also believe it contributed to our success, as we won the meet and claimed the SEC regular season championship!

 

 

This philosophy applies to every aspect of life. Wishing you are somewhere else, doing something different, or with different people does not help you in any way.  It only creates a feeling of unhappiness.  Nothing lasts forever, so cherish each day, hour, and minute to the best of your ability! 

Revel in the gift that is the present moment.  When you do this, experiences become more enjoyable, good times become great, and precious moments become wonderful memories.

 

 

Whether you are stuck in traffic, pushing through an insanely hard workout, or spending quality time with friends, make the most of it.  Living in the now is what brings immediate happiness and will lead to greater satisfaction.

 2 cups flour
 1 tsp baking soda
 ½ tsp salt
 1 tsp cinnamon
 ½ cup granulated sugar
 ¼ cup brown sugar
 ¼ cup Greek yogurt
 ¼ cup vegetable oil
 2 large eggs
 2 tsp vanilla extract
 1 tsp lemon juice
 1 cup mashed bananas (about 3)
 1 cup strawberries, sliced small
 2 tbsp flour

Preheat oven to 350 degrees Fahrenheit.

Whisk together flour, baking soda, salt, and cinnamon. Set aside.

In a separate bowl, beat sugar, brown sugar, Greek yogurt, and vegetable oil well. Mix in eggs, vanilla, and lemon juice.

Stir dry ingredients into wet mixture along with mashed banana. Be careful not to overmix.

Toss strawberries in 2 tbsp flour to coat. Gently stir into batter.

Pour batter into a greased 9x5 inch loaf pan. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.

Let cool in the pan for a few minutes before transferring to a wire rack to cool completely. Slice and enjoy!
