Super Food Berry Parfait

My three favorite grab-and-go breakfasts – chia seed pudding, smoothies, and yogurt parfaits – all rolled into one!  Here’s a healthy, balanced meal or snack that could easily be mistaken for dessert any day.  With the texture of pudding and a creamy, fruity flavor, this parfait is totally delightful, nutritious, and energizing!

Step 1: Blend

A simple smoothie made with banana, berries, and almond milk creates a flavorful base.  I used a mix of raspberries and blackberries, but any type of berry would be delicious!

Step 2: Add chia seeds and wait

Simply stir chia seeds into the smoothie to create an exotic mixture that is full of quick digesting carbohydrates, omega-3s, and antioxidants.  Leave it in the fridge for at least 30 minutes so the chia seeds soak up the moisture until a pudding forms.

Step 3: Layer it up

Vanilla Greek yogurt works wonderfully with the berries, toning it down and adding a creamy, flavor enhancing touch.  If you’re more interested in tang, try using plain Greek yogurt.  Either way, the yogurt contributes a significant source of protein.  

Step 4: Choose toppings and enjoy!

Granola and fresh berries are always my go to toppings, but feel free to get creative!  Nuts, shredded coconut, goji berries, and seeds can all contribute nutritional value, texture, and flavor.  Then, dig in!

Ingredients

 1 banana
 1 cup mixed berries (fresh or frozen)
 ½ cup vanilla unsweetened almond milk
 ¼ cup chia seeds
 1 cup Greek yogurt
 granola

Directions

Blend banana, berries, and almond milk until smooth.

Add chia seeds, stir, and place in the refrigerator. Let sit for at least 30 minutes, until a pudding consistency is reached.

Layer chia seed pudding and Greek yogurt in two jars. Top each with granola, extra berries, and anything else you would like (such as shredded coconut, goji berries, or nuts). Enjoy 🙂
