PB Banana French Toast with Cinnamon Apples
Cinnamon apples have always been one of my favorite breakfast sides. On french toast mornings, my mom would peel a few apples, cook them on a skillet, sprinkle a load of cinnamon on both sides, and place the whole bunch in a bowl in the middle of the table.
The smell was enough to make me yell “ooooooh yes!” and rush to the kitchen. She would always encourage my sister and I to split them evenly as kids, because we both could easily eat the whole batch. I always tried to steal a few extra though!
To this day, I love making cinnamon apples, and I recently realized how much I like them in the same bite as my French toast. So, I started cutting my french toast and eating one apple slice per section. Then, I thought why not combine it with peanut butter and bananas? I mean, adding PB never disappoints.
Last week, I finally got smart and made a french toast sandwich, complete with peanut butter, bananas, and cinnamon apples inside! It was simply decadent, and I just needed to share the goodness 🙂 Add some berries and you’ve got a breakfast feast!
Ingredients Directions Lightly beat eggs, vanilla, and 1/4 tsp cinnamon in a shallow bowl. Dip bread slices in the egg mixture, covering both sides. Transfer bread and apple slices onto a skillet lightly coated with coconut oil or butter. Cook both sides, sprinkling on extra cinnamon before and after flipping. Once French toast is golden and apples are tender, remove from the heat. Spread peanut butter on two slices and arrange apple slices on top.
