Trail Mix Cookies

I’ve made oatmeal raisin cookies, oatmeal chocolate chip cookies, and ones with pumpkin spice. In this recipe, they all combine to make one ultimate oatmeal cookie! I mean it’s got all the goodness in one spot, perfect if you can’t decide what to make!
With raisins, dried cranberries, pumpkin seeds, and of course, chocolate, they are jam-packed with deliciousness. A little bit of cinnamon, nutmeg, and ginger add a flavor profile that surpasses your typical oatmeal raisin cookie. I could go on and on about how good these are, but I’ll let the recipe speak for itself. Just be sure to make a big batch because they vanish fast!
Ingredients Directions Preheat oven to 350 degrees Fahrenheit. Whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside. Cream butter, brown sugar, and granulated sugar until light and fluffy. Add egg, vanilla, and lemon juice then beat well. Mix in flour mixture. Stir in oats, chocolate, raisins, dried cranberries, and pumpkin seeds. Use a melon baller to scoop dough onto a baking sheet. Flatten the mounds slightly with a spatula. Bake for 12-14 minutes, until the edges are just beginning to turn golden. Remove from oven and let cool on the pan for about two minutes. Transfer to a wire rack to continue cooling. Enjoy!
