Combining this flavorful broth with noodles, spices, and vegetables makes for a easy yet nourishing meal.  Hoisin sauce and ginger add an Asian flare that complements the sautéed veggies perfectly.  Relaxing, steaming, and so-so easy, it’s a great vegan lunch or dinner!

Ingredients

 1 cup noodles of choice, cooked
 ¼ cup onion, diced
 ½ cup bell pepper, diced
 ¼ cup edamame beans, shelled
 any other desired vegetables (zucchini, carrots, celery, etc.)
 large handful spinach
 2 tbsp hoisin sauce
 dash ginger
 1 cup LUCKY BONES broth
 salt and pepper to taste

Directions

Begin preparing noodles according to package directions.

Heat a saucepan over medium high heat and add a drizzle of olive oil.

Saute onion, peppers, spinach, and any other desired vegetables until onions become translucent, about 4-6 minutes.

Add hoisin sauce and a dash of ginger. Pour in broth then let simmer until warm, 2-3 minutes.

Add noodles and serve. Sprinkle on salt and pepper to taste.
