Pear, Fig, and Goat Cheese Flatbread

Satisfying and sophisticated, this recipe will make your taste buds do a little dance.  The crisp crust creates a lovely base, and the toppings bring the wow-factor.  The pear and fig paste pair perfectly with the goat cheese, and they give a bit of sweetness to balance out the balsamic vinegar’s refreshing tang.  Walnuts and arugula bring an appetizing earthiness to the dish, and the basil and pepper add delightful flavor complexity.

If you ask me, the quicker dinner is on the table the better, and this recipe takes less than 25 minutes start to finish!  Totally doable, even on weeknights.  Enjoy as a personal flatbread or serve as a exquisite appetizer.

Ingredients

Flatbread
  cup flour (may replace 1/3 cup with whole wheat flour)
 ¼ tsp baking powder
 ¼ tsp salt
 2 tbsp Greek yogurt
 2 tsp olive oil
 2 tbsp water
Topping
 ¼ cup figs (the dried kind)
 2 tbsp water
 ½ pear, sliced
 ¼ cup goat cheese
 handful spinach or arugula
 ¼ cup goat cheese crumbles
 walnuts or pecans

Preheat oven to 425 degrees Fahrenheit.

Whisk flour, baking powder, and salt together.

Add Greek yogurt and olive oil. Stir to combine.

Gradually add water and knead for 3-5 minutes. The dough should form a nice ball that is an even consistency throughout.

Roll out the dough to about 1/4 inch thick. Transfer to a baking sheet lined with parchment paper.

Bake for 8 minutes, until barely golden.

While the crust is in the oven, prepare the fig paste. Combine figs and water in a small bowl. Microwave for about 10 seconds until warm. Mash well with a fork to form a paste. This can also be done in a food processor, but this method yields more clean up!

Remove crust from oven and spread fig paste on top. Top with spinach or arugula, crumbled goat cheese, pear slices and nuts.

Bake for 5-7 more minutes, until pears are tender.

Season with pepper and dried basil then drizzle on balsamic vinegar. Slice, and serve!
