Pineapple Balsamic Salad With Farro
Elevate your lunch regimen with this nutritious salad! Combining pineapple and balsamic creates a perfect balance of sweet and tangy, and the farro adds a lovely chew, not to mention whole grains. The goat cheese provides some tartness, and the walnuts add earthiness and texture. Edamame beans, carrots, dried cranberries, and seeds further enhance this delicious salad! One of my favorite lunches, this dish is a must try! Simply combine the following ingredients and drizzle on a little dressing!
- Greens (I use spinach and spring mix)
- Pineapple Slices
- Goat cheese
- Sliced carrots
- Dried cranberries
- Seeds of choice
- Balsamic vinegar + olive oil (or your favorite balsamic vinaigrette)
Optional: Add some roasted sweet potatoes or butternut squash to give it a bit of fall flare!
