Healthy Pumpkin Spice Pancakes

Let’s get one thing straight: you simply HAVE to make these pumpkin spice pancakes.  I promise you won’t regret it!  Breakfast for dinner, or breakfast for breakfast, they are the perfect fall treat.   They smell amazing, they taste even better, and they are good for your body!  Full of whole grains, protein, and autumn flavors, my mouth is watering just thinking about them!

Ingredients

Pumpkin Spice Pancakes
  cup rolled oats
 ½ cup whole wheat flour
 1 tsp baking powder
 ¼ tsp salt
 1 tsp cinnamon
 ¼ tsp cloves
 ¼ tsp ginger
 ½ cup cottage cheese
 2 large eggs
  cup pure pumpkin
  cup water or milk
 ½ tsp vanilla extract
Banana Topping
 1-2 bananas, sliced
 dark brown sugar
 cinnamon

Directions

Pancakes

Grind rolled oats in a blender until the become a flour.

Add protein powder (or flour), baking powder, salt, cinnamon, cloves, and ginger. Blend to combine.

Add the rest of the ingredients and blend well.

Cook on a skillet with a little butter or coconut oil, flipping once the formed bubbles begin to pop.

Banana Topping

Cook bananas in a skillet with butter or coconut oil over medium heat. Sprinkle on desired amount of cinnamon and brown sugar. Flip slices and continue cooking until soft and caramelized.
