Granola Bites

These granola balls are such a yummy and healthy grab-and-go snack.  Fruity, nutty, and chewy, they are so much better than standard granola bars you find in a grocery store.  For one, they are cute and bite sized, so you can just pop a few in your mouth to satisfy whatever level of hunger you are feeling.  Secondly, the sweetness comes purely from ingredients you can feel good about eating.  No added sugar or corn syrup here!  Try the cherry cocoa balls when you need a little chocolate fix, and opt for the vanilla blueberry balls when you feel like something simple and delightful.  Both flavors are delicious, and the recipe is quite versatile.  I like to whip up a batch of both kinds while I have all the ingredients out and cook them together.  Baking is not absolutely necessary, but I find it brings out the best flavor in the oats when they toasted a bit!

Ingredients

 8 dates, pitted
 ½ cup dried cherries
 2 tbsp warm water
 1 tsp vanilla extract
 1 cup rolled oats
 ¼ cup crushed almonds or pistachios
 1 tbsp chia or hemp seeds
 1 ½ tbsp cocoa powder

Directions

Preheat oven to 350 degrees Fahrenheit.

Combine dates, dried cherries, water, and vanilla extract in a food processor. Pulse until a uniform paste is formed. Note: If you do not have a food processor, microwave the mixture for 20-30 seconds, then mush with a fork. This method is more tedious, but it can certainly be done!

Combine oats, almonds, seeds, and cocoa powder in a bowl. If desired, add a few mini chocolate chips.

Add date mixture. Then, mix with your hands (yup, time to get sticky!) and roll into balls.

Bake for 15 minutes on a pan lined with parchment paper.

Let cool then enjoy! For best storage, place in an airtight container in the refrigerator.
