Healthy Pumpkin Soup

All the fall flavors come together in this warming recipe.  Complete with pumpkin, sweet potatoes, apples and a festive spice blend, you’ll want to snuggle up with this healthy soup every day.

To make this nourishing bowl of goodness, start by dicing the sweet potatoes, apples, and onions.  The smaller the better, as this will reduce the cooking time.  Simply sauté, simmer, and puree!  Then, cuddle up with a blanket, burn a pumpkin spice candle, and enjoy a wonderful bowl of soup in a cozy autumn ambiance!

This recipe is also a perfect appetizer to serve at Thanksgiving gatherings, and it pairs delightfully with cranberry sauce.  However, feel free to enjoy whenever you crave a heart-warming soup!

Ingredients

 ½ cup diced onion
 1 clove garlic, minced (may substitute with 1/4 tsp garlic powder)
 2 tsp olive or coconut oil
 2 medium sweet potatoes, diced relatively small
 2 medium apples, peeled and diced
 1 cup pure pumpkin
 2 cups vegetable broth
 1 tsp cinnamon
 ¾ tsp allspice
 ¾ tsp ginger
 1 milk of choice

Directions

In a saucepan, saute onions in oil over medium/high heat until nearly translucent. Add garlic and saute for about 30 more seconds.

Turn the heat to low and add sweet potatoes, apples, pumpkin, vegetable broth, and spices.

Simmer for 20-25 minutes, until sweet potatoes and apples are tender.

Transfer to a blender and add milk. Puree until smooth. Enjoy!

Garnish with extra milk or cream, pumpkin seeds, and cinnamon, if desired. Also pairs great with cranberry sauce!
