Overnight Berry Parfait

Treat yourself to dessert for breakfast with this overnight berry parfait!  This recipe is one of my favorite on-the-go breakfasts because of its sweet and satisfying nature.  Balanced and healthy, it makes for a perfect start to your day.  Simply prepare the night before and refrigerate overnight!

  1. Start with 1/4 cup precooked grain, such as farro, barley, or even rice.  Pour in the bottom of a mason jar.
  2. Spoon 1/2 cup yogurt into the jar.  Feel free to use whatever type you prefer, but my favorite is vanilla Greek yogurt.
  3. Layer on 1/2 cup frozen berries.  They will conveniently thaw overnight.
  4. Top with granola and anything else you would like to add (shredded coconut, sliced almonds, etc.)

In the morning, grab the jar, stir, and enjoy!
