Champion Snack Mix

Full of antioxidants and healthy fats, this champion snack mix is well balanced and ideal for munching.  I am a firm believer you cannot go wrong with fruit, nuts, and chocolate… and when those delicious components come together with spiced chickpeas, it certainly brings the wow factor!  This mix can be enjoyed on its own, but it is a perfect popcorn topping as well!  Pair with Boom-Chicka-Pop, and you’ll be saying “boom chickpea wow”!

Ingredients

 1 can chickpeas, rinsed and drained
 ½ tsp olive oil
 ¼ tsp chile powder
 ½ tsp cinnamon
 1 cup pecans or walnuts
 ½ cup pumpkin seeds
 ½ cup dried cherries
 ½ cup dried cranberries
 ½ cup dark chocolate chips or chunks
 popcorn

Directions

Preheat oven to 350 degrees Fahrenheit.

Dry off chickpeas with a kitchen towel to remove any excess moisture. You may take off the skins if desired.

Drizzle olive oil over chickpeas and add spices. Toss to coat.

Spread chickpeas on a baking sheet lined with parchment paper.

Bake for 20 minutes, shaking the pan after 10 minutes.

After 20 minutes, shift the chickpeas around again. Spread nuts on baking sheet, and toast the chickpeas and nuts together for 8-10 minutes.

Allow to cool completely. Then, add pumpkin seeds, dried cherries, dried cranberries, and chocolate. Mix and serve over popcorn if desired!
