In honor of the first day of fall, I created this delightful parfait that has an aroma as rich and earthy as it tastes. Layered with crunchy nuts, a hint of sweetness from the honey, and the taste of fall from the pumpkin and spices, you will feel the seasonal festiveness as you dig in. Take 5 minutes to assemble the parfait in a sealed jar, and wake up to a breakfast treat in the morning! Don’t forget to top with a drizzle of honey and some cinnamon!

¾ cup plain greek yogurt
¼ cup pure pumpkin
1 tsp vanilla extract
1 ½ tsp cinnamon
½ tsp nutmeg
½ tsp allspice
Topping Mixture
2 tbsp honey
2 tbsp natural peanut butter
1 tsp vanilla extract
3 handfuls of pecans
2 handfuls of oats
1 handful of ancient grains and pumpkin seeds
1 tsp cinnamon
½ tsp nutmeg
½ tsp allspice
3 tsp water
Directions
Prepare Topping Mixture
1 Heat up honey, peanut butter, and 1 tsp vanilla in microwave for 30 seconds. Stir until combined.
2 Add pecans, oats, seeds, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp allspice, and water. Heat in microwave for another 30 seconds. Set aside.
Prepare Yogurt Parfait
3 Stir pumpkin, vanilla extract, cinnamon, nutmeg, and allspice into yogurt.
4 Layer yogurt with granola mixture in a jar and top with extra pumpkin seeds, pecans, cinnamon, drizzle of honey, or any other desired toppings, enjoy!
