Chocolate Oatmeal Cookies

Although these cookies are both vegan and gluten-free, you certainly don’t need to have a special diet to enjoy them.  Chewy on the inside, crunchy on the outside, and chocolaty all over, they are absolutely scrumptious!  Plus, they are better for you than your typical chocolate chip cookie, thanks to the replacement of butter and sugar with coconut oil and honey.  Not only do these wholesome ingredients make them healthier, they add layers of flavor and make them even more delicious!

Disclaimer: these cookies may vanish, so I suggest hiding them from friends and family members if you plan on enjoying any after the day they are baked.

Ingredients

 2 cups almond flour (or all-purpose flour)
 1 tsp baking soda
 1 tsp baking soda
 ½ tsp cream of tartar
 ½ cup coconut oil, melted
 ½ cup melted chocolate chips
 ¾ cup honey
 2 tbsp coconut sugar (granulated sugar works fine too)
 1 tbsp vanilla extract
 1 ½ cups rolled oats
 ½ cup chocolate chips

Directions

Preheat oven to 350 degrees Fahrenheit.

Whisk almond flour, baking soda, and cream of tartar together in a large bowl.

Melt coconut oil and 1/2 cup chocolate chips. Stir then pour into dry mixture.

Add honey, coconut sugar, and vanilla extract. Mix well.

Stir in rolled oats and remaining 1/2 cup chocolate chips.

Roll dough into balls and then flatten them onto a baking sheet lined with parchment paper.

Bake for 12 minutes at 350 degrees Fahrenheit.

  • These are so good!!! This recipe has been a go-to of mine for years. Chocolate chip cookies are my favourite, and this recipe takes a healthier chocolatey twist on a classic!
