Southwestern Power Wrap

This recipe is super versatile, and can be altered to fit your tastes and dietary needs.  However, it is extremely wholesome, quick, easy, delicious, and makes for an balanced, energy boosting meal no matter how you make it!  Here’s what I put in this wrap of goodness…

-I always start with a whole grain tortilla, which is much more nutritious than a normal tortilla made with white flour.  This is because all parts of the wheat kernel are left in: the bran (high in fiber), the germ (a.k.a. the embryo that contains many nutrients), and the endosperm (starchy).  In contrast, refined flour contains only the endosperm.

-One whole egg and extra egg whites – Whole eggs provide healthy fats, protein, many vitamins, and important minerals.  Mixing in extra egg whites significantly boosts your protein intake but barely adds any calories.

-Brown rice or quinoa – I tend to use whatever leftovers I have in the fridge!  I quickly heat them up in the microwave and add them to my wrap.  They offer a good source of carbohydrates (and a significant amount of protein if we’re talking about quinoa).

-Black beans – High in protein, fiber, and nutrients, these legumes add a southwestern kick to the dish.

-Spinach and peppers – gotta have some veggies!

-Guacamole – Avocados are known as a super food for a reason: they are rich in essential nutrients like potassium, fiber, vitamins, and so much more!  In addition, the unique fruit contains high amounts of monounsaturated fatty acids – good fats – that benefit your body in many ways.

-Chile powder, lime juice, salt, and pepper – Enhance flavor to wake up your taste buds.  Of course, add as much spice or as little spice as you please.

 Egg and/or egg whites
 Bell peppers
 Chile powder (optional)
 Lime juice (optional)
 Spinach
 Brown rice or quinoa
 Black beans
 Cheddar and Monterey jack cheese
 Guacamole

Cook eggs omelet style with the bell peppers, but do not fold it in half. Add a dash of chile powder and a splash of lime juice if desired. Sprinkle cheese on top.

Spread desired amount of guacamole on the tortilla then slide the "unfolded omelet" on top. Salt and pepper to taste.

Place on spinach, brown rice, and black beans.

Roll it up and enjoy! Dip in your favorite salsa.
