Apple Cinnamon Rolls

The addition of apples and cinnamon to bread certainly adds a wow factor that brings delight to each bite.  Cinnamon and apples has to be one of my all time favorite flavor combinations, it just tastes so good!  However, you can easily substitute the filling for chocolate chips (yum!) or use raisins instead of apples.  Whatever you chose to put in them, these rolls lie somewhere between challah and dinner rolls, are fun to bake, and are simply delicious!

Ingredients

Dough
 1 package active dry yeast (2 1/4 teaspoons)
  cup lukewarm milk
  cup warm water
 ¼ cup granulated sugar
 3 cups all purpose flour*
 1 ½ tsp salt
 2 large eggs
 3 tbsp butter (or coconut oil)
Filling
 ¾ cup apples, peeled and diced into small bits
 2 tbsp granulated sugar
 2 tsp cinnamon
Egg Wash
 1 egg, beaten

Directions

Combine yeast with 1/3 cup lukewarm milk and 1/3 cup warm water.

Add sugar, flour, salt, eggs, and butter. Knead using preferred method until the dough is elastic. Form the dough into a ball, place it in a greased bowl, turn it to cover the top, cover with plastic wrap, and let rise until doubled (1-2 hours).

Once the dough has doubled in size, combine cinnamon and sugar in a small bowl or cup.

Divide dough into 12 equal parts. Roll out each section into a rectangle, about 1/4 inch thick. Sprinkle apple bits cinnamon-sugar mixture onto the dough. Roll each section of dough up then pull the sides together to form a tight ball.

Place rolls on a baking sheet lined with parchment paper. Cover rolls with a towel and let them rise until doubled again (1-2 hours).

Near the end of the proofing time, preheat oven to 350 degrees Fahrenheit.

Once the rolls have at least doubled in size, brush on the egg wash to cover the top of each roll.

Bake for 17-18 minutes, until golden.
