Avocado toast is definitely a new trend for a reason! Not only does it add some flavor to your breakfast or lunch, but it is packed full with healthy fats and nutrients. Avocados are rich with essential nutrients like potassium, fiber, vitamins, and so much more! In addition, the unique fruit contains high amounts of monounsaturated fatty acids – good fats – that satisfy your body in several ways including lowering bad cholesterol levels. With that being said, adding avocados to your diet is extremely beneficial, especially when they are full of flavor on the Holy Guacamole toast!

Using guacamole instead of simple avocado slices spices up your toast and adds a desirable texture. Balanced with the acidity of the lemon juice and pickled onions, this Holy Guacamole Toast will be your new breakfast or lunch favorite! It is extremely simple to assemble, yet delicious, nutritious, and oh so tasty!

Tips:

-Add any additional spices or vegetables (cilantro, garlic, onions, tomatoes, cumin, pepper, lemon juice) to the guacamole if you would like to spice it up even more.

-Add a fried or scrambled egg to add nutritional value.

-Pickled onions are best to use after letting them sit in the refrigerator overnight, and they are freshest within the first week.

-Use guacamole immediately after making, as it turns brown quickly. If making guacamole several hours before putting on toast, add extra lemon juice, and scrape off the top.

 Guacamole or avocado slices
 Mini bell pepper
 Lemon juice
Pickled Onions

 Red pepper flakes
 Apple Cider Vinegar

 Garlic powder
 Dried Cilantro
 Ground black pepper
 1 tbsp Sugar

Directions

Slice the red onions and place them into a bowl or jar with apple cider vinegar, cover completely.

Sprinkle in sugar, a dash of salt, pepper, red pepper flakes, cilantro, and garlic powder.

Cover and let sit at room temperature for about an hour. For better results, cover and refrigerate overnight.

Guacamole Toast

Make guacamole by crushing an avocado with a fork, and add a diced mini bell pepper. Use (cilantro, garlic, onions, tomatoes, cumin, pepper, lemon juice) if desired. For a quicker preparation, simply slice avocado or use store bought guacamole.

Toast multigrain bread, and spread desired amount of guacamole on the bread (or place on avocado slices).

Drain vinegar from jar of pickled onions, then place onions on toast.

Sprinkle toast with red pepper flakes and lemon juice. Add a dash of sea salt and dried cilantro if desired, enjoy!
