Chickpea Cookie Dough

The first time I heard the words “chickpea” and “cookie” in the same sentence, I was utterly confused. But when I tried chickpea cookie dough for the first time, I was totally impressed. From sweet to savory – what can’t chickpeas do?
This 5-minute recipe blends together wholesome ingredients and chocolate for a healthy-ish snack that’s surprisingly yummy. Tasting is believing!
The flavor of chickpea cookie dough should not be directly compared to traditional cookie dough. It’s a little more “mild” and slightly less sweet. However, the chickpea-based version is still a fun snack filled with plant-protein. Plus, it stars a little indulgent twist!
Enjoy by the spoonful or as a dip. It’s delicious with apples, strawberries, pretzels, and more.

Combine oat flour, flax seeds, baking powder, and salt in a food processor. Blend to combine. Add chickpeas and process until smooth. Add peanut butter, maple syrup, and vanilla extract. Blend until evenly combined, using a spoon to scrape down the sides if needed. Stir in chocolate chips and enjoy! Store in an airtight container in the refrigerator.

Tastes delicious but I want to meal prep it for 3 days if possible 😀 will it keep for 3 days in the fridge?
