Greek Yogurt Brownies

Yes, I’m the type of person who always likes to finish off a meal with a bit of dessert.  Whether it’s a square of dark chocolate or a spoonful of ice cream, I always like to leave my taste buds with something sweet.  More often than not, I find myself craving a dark chocolate brownie a la mode.

For all the brownie lovers out there, here’s a treat for you.  This classic recipe is super satisfying and has one delicious twist: Greek yogurt.  By substituting most of the oil with yogurt, these brownies jump up a notch on the healthy-ish scale with less fat and more protein.  Plus, it creates a fudgy yet fluffy texture unmatched by any other ingredient.  Yum, yum, yum!

Ingredients

  cup flour
 ¼ tsp baking soda
 ½ tsp salt
  cup vegetable or coconut oil
  cup Greek yogurt
  cup sugar
 2 eggs
 1 tsp vanilla extract
 2 tbsp water
 1 cup semisweet chocolate chips, melted
 1 cup semisweet chocolate chips

Directions

Preheat oven to 325 degrees Fahrenheit

Melt 1 cup chocolate chips (tip: microwave on 50% power for 1 minute, stir, then continue heating in 15-30 second increments until fully melted). Set aside.

In a small bowl whisk together flour, baking soda, and salt. Set aside.

In a separate bowl, stir together vegetable oil, Greek yogurt, eggs, and sugar until smooth. Mix in vanilla and water.

Stir flour mixture and melted chocolate chips into batter. Mix in the second cup of chocolate chips until evenly combined.

Pour batter into a greased 9 x 9 inch cake pan. Bake for 30-35 minutes, until a toothpick comes out mostly clean. Do not over bake! Enjoy.
