Peanut Butter Chocolate Energy Bites
Are healthy peanut butter cups a thing? Probably not, but these energy balls come really close. I mean, memories of Reese’s instantly popped in my mind when I tried the first bite.
With only 5 simple ingredients, they come together in a flash. It’s almost too good to be true…
- They’re super easy and fun to make
- They’re healthy – minus the chocolate I guess, but you need those antioxidants, right?
- And they taste like dessert. It honestly blows my mind.
Overall, they’re perfect little energy boosters any peanut butter chocolate fanatic will love. Let’s just say I certainly belong to that club!
Ingredients Directions Pulse dates in a food processor until no large pieces remain. Note: they may form a ball, and this is fine. Add the rest of the ingredients except water and pulse until evenly combined. Gradually add water, if necessary. You want to reach a consistency that holds together well, but is not overly moist. Roll mixture into balls and flatten slightly to form disks, about 1.5 inches in diameter. Melt chocolate chips and dip in energy bites. Place in a container lined with parchment paper.
