Apple Bread

It’s honestly difficult to describe how amazing this bread is.  Mouthwatering, irresistible, and utterly delicious, it’s the kind of bread you just can’t resist coming back for another slice.  It’s got plenty of apple, shredded to bring out the flavor and moisture in every bite, and lots of cinnamon spice.  Plus, it’s easy to make and freezes well, so you can enjoy a seemingly fresh-out-of-the-oven slice every morning for days to come.  Let me tell ya, it’s hard not to smile while you’re eating this bread!

Ingredients

 2 cups flour (may replace up to 1 cup with whole wheat flour)
 1 tsp salt
 1 tsp baking powder
 1 tsp baking soda
 2 ½ tsp cinnamon
 1 tsp nutmeg
 ½ tsp cloves
 2 large eggs
 ¾ cup granulated sugar
 ½ cup brown sugar
 ½ cup Greek yogurt
 ½ cup vegetable oil
 1 ½ tsp vanilla extract
 1 ¼ cups apples, peeled and finely shredded (2-3 apples)

Directions

Grease a 9x5 inch loaf pan and preheat oven to 350 degrees Fahrenheit.

Whisk together flour, salt, baking powder, baking soda, cinnamon, nutmeg, and cloves. Set aside.

Beat eggs, granulated sugar, brown sugar, vegetable oil, Greek yogurt, and vanilla extract in a separate bowl.

Grate apples and press them into a measuring cup. Gently pour out the excess liquid, but do not drain completely!

Fold dry mixture and apples into the wet ingredients. Be careful not to overmix.

Pour batter into prepared loaf pan and bake for 50-60 minutes, until a toothpick comes out clean.

Remove from the pan and transfer to a wire rack to cool before slicing. Enjoy!
