Easy Homemade Granola

I’m sure a lot of people would agree that granola is a total pantry staple.  It certainly is for me!  As one of my favorite toppings on oatmeal, chia seed pudding, and Greek yogurt parfaits, it is rare I go a day without eating some sort of granola.  In fact, I often snack on it by the handful.  The best thing about it, however, is the endless number of variations, which are somehow ALL good.  Plus, it is so easy to make granola at home, where you have the freedom to put whatever you want in it!

Here’s two flavors I decided to try the other day: vanilla blueberry almond and cinnamon cranberry walnut.  They have the same base ingredients but different mix-ins to jazz it up a little.  Both turned out delightful, but I have to say I loved the cinnamon cranberry walnut just a teeny-tiny bit more.  I am a huge cinnamon fan though, so that is just my personal preference.  Chose whatever sounds best to you or try them both!  After all, all you have to do is stir, bake, then start snacking!

Note: The purpose of the egg white is to hold the granola together. Simply omit if you are vegan or prefer less clustered granola.

Ingredients

Vanilla Blueberry Almond Granola
 2 tsp coconut oil, melted
 1 tbsp ground flax meal
 ¼ cup honey
 1 tsp vanilla extract
 1 large egg white
 1 ½ cups rolled oats
 ½ cup slivered almonds
 2 tbsp sunflower seeds
 2 tbsp chia seeds
 1 tbsp shredded coconut (optional)
 ½ cup dried blueberries
Cinnamon Cranberry Walnut Granola
 2 tsp coconut oil, melted
 1 tbsp ground flax meal
 ¼ cup maple syrup
 1 tsp vanilla extract
 1 large egg white
 1 ½ cups rolled oats
 ½ cup walnuts (pecans would be good too)
 2 tbsp pumpkin seeds
 2 tbsp chia seeds
 1 ½ tsp cinnamon
 ½ cup dried cranberries

Directions

Preheat oven to 325 degrees Fahrenheit.

Combine all ingredients in a large bowl and mix well, making sure everything is evenly combined.

Spread granola on a baking sheet lined with parchment paper.

Bake for about 20 minutes, stirring halfway through. Remove it from the oven when it is beginning to turn golden. Let cool, then break into clusters, if necessary.

Store in an airtight container. Enjoy on its own, with your favorite milk, or use it as a topping!
