Blueberry Banana Protein Pancakes

These pancakes are sure to bring a bright start to your morning, especially since this recipe is a healthy twist on classic blueberry pancakes.  These blueberry banana pancakes are just so energizing and nutritious!  From oats to banana, Greek yogurt, and eggs – they’ve got whole grains, fruit, a little dairy, and a ton of protein.  Cook on a skillet with a bit of coconut oil and you’ve got healthy fats as well.  That’s one satisfying, balanced, and simple breakfast if you ask me!  Stack ’em up and chow ’em down!

Ingredients

 ½ cup rolled oats
 ½ cup whole wheat flour
 1 scoop vanilla protein powder
 1 tsp baking powder
 ¼ tsp salt
 1 tsp chia seeds (optional)
 1 banana
 2 large eggs
 ½ cup Greek yogurt
 ½ cup milk of choice
 ½ tsp vanilla extract
 ½ cup blueberries

Directions

Grind rolled oats to a flour in a blender.

Add flour, protein powder, baking powder, salt, and chia seeds. Blend to combine.

Add the rest of the ingredients except blueberries and blend well.

Stir in blueberries.
