Berry Pomegranate Chia Parfait

Mornings are so much better when you have a cute and delicious parfait to enjoy – starting your day fresh with a vibrant and healthy jar of goodness just feels so good.

With plenty of textures to enjoy, this berry pomegranate chia parfait is so easy, so balanced, and super energizing!  It’s one of my favorite creations, and it’s the perfect fall treat when the ingredients are in season!  The berries, pomegranate seeds, apples, and cinnamon complement each other so well to create a surprisingly delicious flavor combination.  It’s the perfect balance of sweet, fruity, and tart.

You can totally chill the parfait in the fridge overnight for a quick grab-and-go breakfast (thank goodness for mason jars!) but it is also amazing served warm.  Feel free to adjust the amount of honey and cinnamon used to fit your tastes.  I personally like just a little honey and a lot of cinnamon.  It turns out great with unsweetened vanilla almond milk in the chia seed pudding (my personal favorite), but any type of milk can be used in the recipe.

Ingredients

 2 tbsp chia seeds
 ½ cup milk of choice (vanilla unsweetened almond milk works great)
 2 tsp honey, divided
 ½ cup cooked oatmeal (rice, farro, or other grains also work well - you can even try muesli)
 ½ cup berries (fresh or frozen and thawed)
 handful diced apple slices
 a few dried cranberries
 ¼ tsp cinnamon, more or less to taste
 pomegranate seeds
 granola

Directions

1

Combine chia seeds with milk and 1 tsp honey. Stir and refrigerate for at least one hour.

Spoon about 1/2 cup cooked oatmeal into a bowl or jar.

Bring 1/2 cup berries to desired temperature. Lightly smash berries and stir in 1 tsp honey, if desired. Layer on top of oatmeal.

Add chia seed pudding.

Toss apples and dried cranberries in cinnamon until lightly coated. Layer on.

Top with pomegranate seeds and granola.

Serve warm or cold.
