Mini Chocolate Banana Muffins

Delightfully moist, naturally sweet from the bananas, and super chocolatey, these muffins will bring you to breakfast heaven.  With cocoa powder, melted chocolate chips, and un-melted chocolate chips incorporated, these muffins are a chocolate lovers dream.  Plus, you can have these cuties completely ready to devour in less than 25 minutes.  Just thinking about them makes my mouth-water!

Ingredients

 1 cup flour
 ½ cup cocoa powder
 1 tsp baking soda
 ½ tsp salt
 2 large eggs
 ¼ cup vegetable oil
  cup Greek yogurt
 ½ cup granulated sugar
 2 ½ tsp vanilla extract
 ½ cup melted chocolate chips
 ½ cup mini chocolate chips
 1 cup overripe bananas, mashed (about 3 bananas)
 shredded coconut, for sprinkling on top

Directions

Preheat oven to 350 degrees Fahrenheit and line a mini muffin tin with baking cups.

Whisk together flour, natural cocoa powder, baking soda, and salt. Set aside.

Mix eggs, vegetable oil, Greek yogurt, sugar, and vanilla well. Add mashed banana.

Melt 1/2 cup chocolate chips and stir in.

Gradually add the flour mixture to the wet mixture and stir until just combined.

Stir in the mini chocolate chips.

Fill muffin cups almost all the way full with batter. Sprinkle on shredded coconut. Bake for 10-12 minutes, until a toothpick inserted in the center comes out clean.
