Edamame Hummus

My kitchen gadget inventory grew recently when I picked up a mini food processor, and I could not wait to use it!  The next day, while getting distracted at the grocery store (like I often do), I found myself looking at the different types of hummus.  When I spotted a light green dip labeled edamame hummus, it instantly caught my attention.  Then, I realized it could be the perfect thing to experiment with in my new food processor.  So, I strolled a few aisles over, grabbed some tahini off the shelf, and started brainstorming.  Right when I got home, I got to work in the kitchen.  With a little bit of can opening and some olive oil drizzling, I came up with this mild yet flavorful recipe!  This edamame hummus is super easy, comes together in less than five minutes, and is wonderfully smooth and delicious.  Plus, it is vegan and filled with healthy fats and protein.  Dip vegetables or pita (chips?) in it for a nutritious snack!

Ingredients

 1 cup edamame beans, shelled
 1 cup cannellini beans (white beans)
 2 tbsp tahini
 3 tbsp lemon juice (or juice of one lemon)
 1 clove garlic, minced (or 1/2 tsp garlic powder)
 ¼ tsp cumin
 ¼ tsp salt
 ¼ tsp pepper
 dash paprika
 2 tbsp water (may use more or less depending on desired consistency)
 2 tbsp olive oil

Directions

1

In a food processor, combine all ingredients except olive oil and process until smooth.

Slowly add the olive oil and continue to blend.

Garnish with red pepper flakes, cilantro, or roasted red peppers if desired.
