These vegetable packed pancakes started out as an experiment, but they actually turned out AMAZING – almost like fluffy veggie burgers!  Savory and full of flavor, try these quick and easy pancakes when you feel like something out of the ordinary.  With a little blender action and a flip on the griddle, you’ve got a balanced meal!  Creativity in the kitchen certainly paid off in making this healthy and delicious recipe, and here is a breakdown of the goodness inside each pancake…

Whole wheat flour – a much more nutritious choice than all purpose flour because every part of the wheat kernel is left in

Cottage cheese and eggs – create a delightful consistency while providing a significant source of protein and other beneficial nutrients.

Spinach – enhances color (yes, they do turn green!) as well as vitamin and nutrient density.

Peppers, peas, and onions – veggies, need I say more?

Cumin, paprika, basil, and ginger – hello delicious spice combo!

Ingredients

 1 ⅓ cups whole wheat flour
 2 tsp baking powder
 ¼ tsp salt
 ½ tsp cumin
 ½ tsp paprika
 1/4-1/2 tsp ginger
 1 tsp dried basil
 ½ cup cottage cheese
 2 large eggs
 ½ cup water
 ½ cup peas
 ¼ cup bell peppers, diced
 2 tbsp onion, diced
 2 handfuls spinach

Directions

Combine flour, baking powder, salt, and spices in a blender. Pulse to mix well.

Add the rest of the ingredients and blend until thoroughly combined.

Cook pancake style on a griddle with olive oil. Serve with hummus or sriracha sauce and enjoy!
