Lava Cake

This lava cake is everything a dessert should be; warm, gooey, and deliciously rich. Paired with vanilla ice cream and garnished with fresh berries, this lava cake will surely impress.

Ingredients

Lava Cake
 ½ cup butter
 6 oz bittersweet chocolate chips (or) 8 60% Ghirardelli squares
 2 eggs
 2 egg yolks
  cup sugar
  cup and 1 tbsp brown sugar
 1 pinch salt
 1 tbsp cocoa powder
 2 tbsp flour
 1 tsp vanilla extract

Directions

Prepare 6 ramekins by greasing with butter and dusting with cocoa powder, and preheat oven to 450 degrees.

Melt butter and chocolate in microwave for 30 second intervals until smooth.

In a separate bowl, beat eggs, egg yolks, sugar, vanilla, salt, and cocoa powder for 3-4 minutes.

Add flour and chocolate mixture to egg mixture, and blend until combined.

Pour batter evenly into prepared ramekins and bake for 10-12 minutes, or until edges are cooked but center in still gooey.

After removing from oven let stand for 1 minute, then turn ramekin upside down on a plate and cut open lava cake. Serve with vanilla ice cream and berries, enjoy!
