Soft and Chewy Apple Cinnamon Oat Bars
These oat bars make a perfect, chewy, yet slightly sweet snack to power you through your day! They are simple to make and slightly softer than traditional granola bars. Plus, apples and cinnamon make everything better… am I right? Place in a cool, dry place in an airtight container, or store them in the fridge.
Ingredients Directions Preheat oven to 350 degrees Fahrenheit Spread out 1 cup rolled oats on a baking sheet lined with parchment paper. Toast in preheated oven for about 10 minutes. Meanwhile, mix together oat flour, cinnamon, baking powder, and salt in a large bowl. If you do not have oat flour, simply grind 1/2 cup of rolled oats in a blender. Add rice crisps, sunflower seeds, raisins, and apples. Heat oil, brown sugar, and honey in a small saucepan over medium heat until the sugar is dissolved, stirring occasionally. Then, add the mixture to the bowl with the rest of the ingredients. Add apple sauce, vanilla extract, and rolled oats (once they are done toasting). Stir. Transfer mixture into a 9" x 5" loaf pan (or baking pan of similar size) lined with parchment paper. Press down to make very compact (this is important so the bars don't crumble). Placing a sheet of parchment paper on top then using another pan to press seems to be the best method. Otherwise, simply using a fork or spatula works as well.
