Plant-Based Peach and Berry Toast
This toast is totally loaded and absolutely delicious. The recipe starts with a simple piece of bread, but you’ll end up with a peachy, nutty, cinnamon-y, and naturally sweet breakfast feast. My mouth is watering just thinking about it! Chia seeds, granola, and berries make great additions, but what really sets this toast apart, however, is the peaches. Cook ’em on a skillet with a (large) sprinkle of cinnamon, and it adds a warm depth of flavor that will spark a flame in your taste buds.
As usual, the recipe can be adjusted to fit your dietary needs and preferences. It’s great with any nut butter, dipped in any sort of vanilla or berry yogurt. Most recently, I used half “cashewgurt” and half triple berry oatmilk yogurt mixed in with a few extra berries and chia seeds… it was out of this world good. Pro tip: pile the toast high and enjoy with a fork and knife!
Ingredients Directions Heat a skillet over medium heat with a bit of coconut oil (or other cooking oil of choice), and slice the peach into small pieces. Cook peach slices for 3-4 minutes, until desired tenderness is reached. Flip slices and sprinkle on a generous amount of cinnamon about halfway through. Meanwhile, toast a slice of multigrain bread. Spread nut butter on the toast and add extra cinnamon if desired. Top with cooked peaches, berries, and anything else you would like. Dip in yogurt and enjoy!
