Chewy Vegan Peanut Butter Cookies

Ingredients

 ½ tsp baking soda
 ¼ tsp baking powder
 1 cup oat flour
 2 tsp vanilla extract
 3 tbsp unsweetened vanilla almond milk
 3 oz applesauce
 ¾ cup brown sugar
 2 tbsp maple syrup/agave nectar/honey
 1 cup natural peanut butter

Directions

Whisk together baking soda, baking powder, and oat flour in a small bowl. Preheat oven to 350 degrees Fahrenheit.

Beat together almond milk, applesauce, sugar, honey, vanilla, and peanut butter in a large bowl. Add dry ingredients to wet and stir until combined.

Scoop tablespoon amounts of cookie batter onto a cookie sheet and cook about 15 minutes or until golden. Let cool and serve, enjoy!
