Apple Cinnamon Raisin Muffins

Ingredients

 1 ½ cups flour
 ½ cup granulated sugar
 ¼ cup brown sugar
 2 tsp baking powder
 1 ½ tsp cinnamon
 ½ tsp salt
 3 tbsp vegetable oil
 3 tbsp Greek yogurt (may substitute with more vegetable oil)
 1 large egg
 about 1/3 cup milk or non-dairy substitute
 1 ½ tsp vanilla extract
 1 apple, peeled and diced small
 ½ cup raisins

Directions

Preheat oven to 400 degrees Fahrenheit.

Line a standard muffin tin with 10 paper liners. Fill remaining cups halfway with water.

Whisk together flour, sugar, baking powder, cinnamon, and salt in mixing bowl.

Add vegetable oil, Greek yogurt, egg, and vanilla to a measuring jug, then fill to the 1 cup line with milk.

Mix wet ingredients into dry mixture until just combined.

Stir in apples and raisins.

Divide batter evenly between baking cups. Sprinkle turbinado sugar on top, if desired.

Bake for about 20 minutes, until a toothpick comes out clean.

Immediately transfer to a cooling rack. Enjoy or freeze for later!
