Chocolate Coconut Energy Bites

One of my favorite things about energy bites is how many flavors you can create… and these coconut chocolate ones certainly do not disappoint.  Thanks to the dates and cocoa powder, they are a healthy snack that tastes like dessert!

With only a few ingredients, these energy balls are easier than easy to make.  All it takes is a few pulses in the food processor and some rolling.  Getting your hands a little sticky and shaping them into balls is always the most fun part.  Sometimes, it reminds me of playing with putty as a kid, and the best thing is that you can eat them!

 

 

If your in the mood for an extra bit of decadence, you can melt some chocolate chips and drizzle it on!  Dipping works well too.  The more chocolate the better, am I right?  Just be sure to place the bites on a piece of parchment paper so they don’t stick to each other or your container.  

Lastly, these balls of coconut yumminess store well in the refrigerator.  Whenever you’re in the need of a quick energy boost, just grab one and pop it in your mouth!

Ingredients

 1 cup dates
  cup shredded coconut
 1 tbsp cocoa powder
 ¼ cup rolled oats
 1 tbsp chia seeds
 1 tsp vanilla extract
 1 tsp water, more or less depending on consistency

Directions

Pulse dates in a food processor until no large pieces remain. Note: they may form a ball, and this is fine.

Add the rest of the ingredients except water and pulse until evenly combined.

Gradually blend in water, if necessary. You want to reach a consistency that holds together well, but is not overly moist.

Scoop mixture and roll into balls, about 1 inch in diameter. Drizzle or dip in melted chocolate, if desired. Store in an airtight container in the fridge.
