Chocolate Coconut Energy Balls
Ingredients
1 cup dates ⅓ cup shredded coconut 1 tbsp cocoa powder ¼ cup rolled oats 1 tbsp chia seeds 1 tsp vanilla extract 1 tsp water, more or less depending on consistency
Directions
Pulse dates in a food processor until no large pieces remain. Note: they may form a ball, and this is fine. Add the rest of the ingredients except water and pulse until evenly combined. Gradually blend in water, if necessary. You want to reach a consistency that holds together well, but is not overly moist. Scoop mixture and roll into balls, about 1 inch in diameter. Drizzle or dip in melted chocolate, if desired. Store in an airtight container in the fridge.1234
