Cranberry Almond Energy Balls
Ingredients
¾ cup medjool dates, pitted ¼ cup dried cranberries ½ cup rolled oats ¼ cup almonds ½ tsp vanilla extract ½ tsp cinnamon 1 tbsp chia seeds 1 tsp water, more or less depending on consistency
Directions
Pulse dates in a food processor until no large pieces remain. Note: they may form a ball, and this is fine. Add the rest of the ingredients except water and pulse until evenly combined. Gradually blend in water, if necessary. You want to reach a consistency that holds together well, but is not overly moist. Scoop mixture and roll into balls, about 1 inch in diameter. Store in an airtight container in the fridge.1234
