Apple Bread

Ingredients
2 cups flour (may replace up to 1 cup with whole wheat flour)
1 tsp salt
1 tsp baking powder
1 tsp baking soda
2 ½ tsp cinnamon
1 tsp nutmeg
½ tsp cloves
2 large eggs
¾ cup granulated sugar
½ cup brown sugar
½ cup Greek yogurt
½ cup vegetable oil
1 ½ tsp vanilla extract
1 ¼ cups apples, peeled and finely shredded (2-3 apples)
Directions
1Grease a 9x5 inch loaf pan and preheat oven to 350 degrees Fahrenheit.
2Whisk together flour, salt, baking powder, baking soda, cinnamon, nutmeg, and cloves. Set aside.
3Beat eggs, granulated sugar, brown sugar, vegetable oil, Greek yogurt, and vanilla extract in a separate bowl.
4Grate apples and press them into a measuring cup. Gently pour out the excess liquid, but do not drain completely!
5Fold dry mixture and apples into the wet ingredients. Be careful not to overmix.
6Pour batter into prepared loaf pan and bake for 50-60 minutes, until a toothpick comes out clean.
7Remove from the pan and transfer to a wire rack to cool before slicing. Enjoy!
