Berry Crisp

Each morning, I begin by writing down three core intentions for the day and three things to be thankful for.  Today, my gratitude list included frozen produce.  Although it is something we do not often think about, freezer technology allows us to enjoy food at its peak freshness for months, and this is a great luxury that people never used to have.  So, thanks to modern food storing tactics, we are able to eat produce that has been frozen at it’s best state even when its out of season.  Specifically on a winter day like today, I would not have enjoyed this wonderful summertime dessert without a stash of frozen berries.  I suppose I could have bought some imported berries at the grocery store, another thing to be thankful for, but frozen is a lot friendlier on my budget!

Anyway, this berry crisp is an absolutely delicious, relatively healthy dessert!  Juicy berries with a cinnamon oat crumble and a hint of coconut is simply a mouthwatering, smile bringing combination.  It requires only 5 minutes of prep time and minimal ingredients, and the recipe makes a perfect amount for two…if you can bear to share some!

I used a crème brûlée dish, but feel free to adjust the recipe to fit whatever dish you are using.  Using the same measurements listed, it works great when divided between two small ramekins.  If you want to make a larger batch, quadruple the recipe and use a pie plate or cake pan.  I used 1/2 blueberries and 1/2 blackberries, but any combination of berries would work well.  Serve warm with a scoop of vanilla ice cream!
