Cranberry Chocolate Granola Bark

This healthier side holiday treat will surely waft a wonderful aroma through your home. With citrus and plenty of spice, the flavor combination delightfully matches the winter season! The granola is naturally sweetened with maple syrup and honey, and it has plenty of oats and nuts (not to mention, vanilla, orange zest, holiday spices, cranberries, and chocolate). This snack is super simple to make and has a delicious crunch!

Ingredients

 1 ½ cups rolled oats
 ¼ cup crushed almonds
 ¼ cup crushed pecans
 2 tbsp seeds (flax, chia, hemp, or a mix)
 1 ½ tsp cinnamon
 ½ tsp nutmeg
 ½ tsp cloves
 ½ tsp ginger
 1 tsp orange zest
 1 tbsp honey
 2 tbsp maple syrup
 1 tsp vanilla extract
 1 tsp olive oil
 1 large egg white
 ½ cup dried cranberries
 1 ½ cups dark chocolate

Directions

Preheat oven to 350 degrees Fahrenheit.

Combine rolled oats, almonds, pecans, seeds, cinnamon, nutmeg, cloves, ginger, and orange zest in a mixing bowl. Stir to combine.

In a separate bowl, combine honey, maple syrup, vanilla, olive oil, and the egg white. Mix well.

Combine the wet mixture with the dry mixture and add dried cranberries. Stir until evenly combined.

Line an 8x8" cake pan with parchment paper, leaving any excess up the sides. Pour in granola and spread evenly in the pan.

Press down on granola using the back of a spatula.

Bake for 25-30 minutes, until hardened. Monitor the granola to make sure it does not burn.

Remove from oven and let cool for about 15 minutes.

Melt dark chocolate in the microwave. Use 50% power for one minute, stir, then microwave in 15 second increments until fully melted and smooth.

Pour chocolate over granola and spread evenly. Sprinkle on shredded coconut, if desired.

Refrigerate until hardened, about 20-30 minutes.

Cut into squares and enjoy! Store in an airtight container.
