Edamame Hummus
Ingredients
1 cup edamame beans, shelled 1 cup cannellini beans (white beans) 2 tbsp tahini 3 tbsp lemon juice (or juice of one lemon) 1 clove garlic, minced (or 1/2 tsp garlic powder) ¼ tsp cumin ¼ tsp salt ¼ tsp pepper dash paprika 2 tbsp water (may use more or less depending on desired consistency) 2 tbsp olive oil
Directions
In a food processor, combine all ingredients except olive oil and process until smooth. Slowly add the olive oil and continue to blend. Garnish with red pepper flakes, cilantro, or roasted red peppers if desired.123
