Apple Cinnamon Rice Pudding

Ingredients

 ½ cup brown rice
 3 ½ cups milk of choice (I use almond)
 2 tbsp pure maple syrup
 ½ tsp vanilla extract
 1 tsp cinnamon, plus more to taste
 ¼ tsp nutmeg, cloves, or allspice (depending on preference)
 1 apple, peeled and diced small

Directions

Combine brown rice, milk, maple syrup, vanilla extract, and spices in a sauce pan. Bring to a boil (watch carefully to avoid boiling over) then immediately turn to low heat.

Simmer for 25 min then add apples. Cook for 10-15 more minutes, stirring occasionally until it is creamy and excess liquid is absorbed.
