Mini Muffin Trio

Ingredients

Mini Muffin Batter
 1 egg
 3 tbsp milk
 ¼ cup vanilla greek yogurt
 3 tbsp vegetable oil
 ¼ cup brown sugar
 ¼ cup white sugar
 1 tbsp apple cider vinegar
 ½ tsp baking soda
 ½ tsp baking powder
 1 cup flour
 1 pinch salt
Additions For Vanilla Spice Mini Muffins
 2 tsp vanilla extract
 1 tsp cinnamon
 ½ tsp nutmeg
Additions For Cherry Chocolate Chip Mini Muffins
 ½ tsp vanilla extract
 1 handful semisweet chocolate chips
 1 handful dried cherries
Additions For Orange Blueberry Mini Muffins
 1 tsp vanilla extract
 ½ tsp cinnamon
 3 tbsp orange juice
 ¼ cup flour
 1 large handful fresh blueberries OR 1/4 cup frozen blueberries

Directions

Mini Muffin Batter

In a medium sized bowl, combine milk, yogurt, egg, brown sugar, white sugar, vegetable oil, and apple cider vinegar with a fork until smooth.

In another bowl, whisk together flour, baking powder, baking soda and salt. Add the dry ingredients into the egg mixture, and mix until combined.

Preheat oven to 375 degrees Fahrenheit. Divide muffin batter into 3 separate bowls, in preparation to create 3 different mini muffin flavors. (Recipes for specific flavors below)

Vanilla Spice Mini Muffins

Add vanilla, cinnamon, and nutmeg to muffin batter. Stir until combined, but do not over mix. Spray mini muffin pan with cooking spray, or use mini muffin liners, and bake for about 12 minutes, enjoy!

Cherry Chocolate Chip Mini Muffins

Stir in vanilla, cherries, and chocolate chips to mini muffin batter. Spray mini muffin pan with cooking spray, or use mini muffin liners, and bake for about 12 minutes, enjoy!

Orange Blueberry Mini Muffins

Add vanilla, orange juice, and cinnamon to mini muffin batter.

Add flour to thicken, then gently stir in blueberries. Spray mini muffin pan with cooking spray, or use mini muffin liners, and bake for about 12 minutes, enjoy!
