Ingredients
Pancakes
⅓ cup rolled oats
1 scoop vanilla protein powder
½ tsp baking powder
dash salt
¼ cup cottage cheese
1 egg
¼ cup liquid (water, milk)
¼ tsp vanilla extract
1 tsp chia seeds
2 tbsp cooked quinoa (optional)
Berry Compote
½ cup frozen berries
1 tsp honey
Directions
Pancakes
1Grind rolled oats in a blender until they become a flour.
2Add protein powder, baking powder, and salt. Blend to combine.
3Add the rest of the ingredients and blend.
4Cook on a skillet with coconut oil.

5Microwave frozen berries for 30 seconds then mush with a fork.
6Add honey, stir, and serve!
