Vegetable Egg Bites

Ingredients
2 large eggs
1 cup egg whites
salt and pepper to taste
1 bell pepper
2 large handfuls spinach
large handful baby carrots
½ cup shredded pepper jack cheese
Directions
1Preheat oven to 350 degrees Fahrenheit and grease a muffin tin with cooking oil.
2Combine eggs and egg whites in a bowl and sprinkle in salt and pepper. Beat with a fork.
3Grate red peppers, spinach, and carrots in a chopper or food processor.
4Stir vegetables and cheese into the egg mixture.
5Divide between baking cups, filling each about halfway full. Using a 1/4 cup for scooping works well.
6Bake for about 20 minutes, until set.
7Remove from oven, transfer to a plate or wire rack, and let cool. Enjoy!
