Black Rice and Banana Pudding
 ½ cup black rice
 3 cups coconut or almond milk
 ½ tsp vanilla extract
 1 banana, mashed
Peachy Rice Pudding
 ½ cup jasmine rice
 3 ½ cups coconut or almond milk
 ½ tsp vanilla extract
 1 peach, peeled and diced small
Prepare Black Rice and Banana Pudding

Combine black rice, milk, and vanilla extract in a sauce pan. Bring to a boil (watch carefully to avoid boiling over) then immediately turn to low heat.

Simmer for 30 min then mix in mashed banana. Cook for 30 more minutes, stirring occasionally until it is creamy and excess liquid is absorbed.

Prepare Peachy Rice Pudding

Combine jasmine rice, milk, and vanilla extract in a sauce pan. Bring to a boil (watch carefully to avoid boiling over) then immediately turn to low heat.

Simmer for 20 min then add diced peaches. Cook for 10-15 more minutes, stirring occasionally until it is creamy and excess liquid is absorbed.

Assemble Parfait

Allow both rice puddings to cool, and refrigerate them if desired.

Layer pudding in a jar, alternating the black rice and banana pudding with the peachy rice pudding. Top with berries and granola. Enjoy!
