Strawberry Banana Bread

Ingredients

 2 cups flour
 1 tsp baking soda
 ½ tsp salt
 1 tsp cinnamon
 ½ cup granulated sugar
 ¼ cup brown sugar
 ¼ cup Greek yogurt
 ¼ cup vegetable oil
 2 large eggs
 2 tsp vanilla extract
 1 tsp lemon juice
 1 cup mashed bananas (about 3)
 1 cup strawberries, sliced small
 2 tbsp flour

Directions

Preheat oven to 350 degrees Fahrenheit.

Whisk together flour, baking soda, salt, and cinnamon. Set aside.

In a separate bowl, beat sugar, brown sugar, Greek yogurt, and vegetable oil well. Mix in eggs, vanilla, and lemon juice.

Stir dry ingredients into wet mixture along with mashed banana. Be careful not to overmix.

Toss strawberries in 2 tbsp flour to coat. Gently stir into batter.

Pour batter into a greased 9x5 inch loaf pan. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.

Let cool in the pan for a few minutes before transferring to a wire rack to cool completely. Slice and enjoy!
