Ingredients
Ingredients Whole grain tortilla Egg and/or egg whites Bell peppers Chile powder (optional) Lime juice (optional) Spinach Brown rice or quinoa Black beans Cheddar and Monterey jack cheese Guacamole
Directions
Cook eggs omelet style with the bell peppers, but do not fold it in half. Add a dash of chile powder and a splash of lime juice if desired. Sprinkle cheese on top. Spread desired amount of guacamole on the tortilla then slide the "unfolded omelet" on top. Salt and pepper to taste. Place on spinach, brown rice, and black beans. Roll it up and enjoy!
