Pulse dates in a food processor until no large pieces remain. Note: they may form a ball, and this is fine.
Add the rest of the ingredients except water and pulse until evenly combined.
Gradually add water, if necessary. You want to reach a consistency that holds together well, but is not overly moist.
Roll mixture into balls and flatten slightly to form disks, about 1.5 inches in diameter.
Melt chocolate chips and dip in energy bites. Place in a container lined with parchment paper.
Use remaining chocolate to drizzle on top (tip: cut a small slit in a plastic bag and squeeze melted chocolate through). Refrigerate to let chocolate harden, about 10 minutes. Enjoy!
Store in an airtight container in the fridge.
